Ingredients
hard squashes (acorn, butternut, delicata, kabocha all work), peeled with a peeler to make ribbons
apple cider vinegar
EVOO
s&p
parsley, chopped
mint, chopped
red onion, sliced thin
prosciutto, sliced thin
pomegranate seeds
sunflower sprouts
Instructions
Sprinkle the ribbons of squash with vinegar, oil, and salt and pepper and let sit for 30 minutes.
Toss the marinated squash, parsley, mint, and onion and spread out on to a platter.
Garnish with prosciutto, pomegranate, and sunflower sprouts.
